Recipe for chanterelle salad with chicken

A special piquancy of this snack gives a sharp dressing. The original contrast of salty and sweet highlights the refreshing greens.

Preparation Procedure:

  1. Make a dressing - combine mustard in a bowl with 1 tbsp. oils, horseradish, vinegar and lemon juice. Pepper, salt and slightly beat.
  2. Cut the chicken into thin slices. Pour them 1 tbsp. refueling, mash your hands and fry on a grill or griddle. After waiting for it to cool, split into small pieces.
  3. Grate carrots on a medium grater, salt and fry in the remaining oil until soft.After cooling, separate one third for decoration.
  4. Avocado and celery boiled celery into cubes, mix with chicken, carrots and finely chopped greens. Pour over dressing and mix well.
  5. Put the mass in a salad bowl, decorate the top with roasted carrots and sprinkle with dressing.

Before serving, snack should be put in the fridge for 1 hour.

Chanterelle salad with Korean carrot

Spicy carrots marinated in Korean make the basis of the dish. All components harmoniously binds sour-sweet sauce. For the recipe you will need:

  • turkey fillet - 400 g;
  • Korean carrot - 200 g;
  • boiled potatoes - 3 pcs .;
  • hard cheese - 150 g;
  • white wine vinegar - 2 tbsp. l .;
  • icing sugar - 1st ..l .;
  • mayonnaise - 4 tbsp .;
  • peppercorns - 5 pcs .;
  • bay leaf - 1 pc .;
  • anise - 1 asterisk;
  • cinnamon - 1 pinch;
  • salt, pepper - to taste;
  • water - 1.5 l.

If desired, you can also add 1 pickled cucumber, diced.

  1. Boil turkey fillet in water with bay leaf, peppercorns, anise, cinnamon. Salt, pepper and cool.
  2. Cut potatoes and turkey into cubes, grate cheese. Combine all products, add two thirds of the total amount of carrots.
  3. Combine mayonnaise, vinegar, powdered sugar, salt and pepper in a bowl. Season the salad dressing and mix well.
  4. Decorate the top with the remaining carrots.

If you want to get a more nutritious version of the dish, boil the turkey until half cooked, and then fry in vegetable oil.

Salad "Chanterelle" - a universal appetizer, the composition of which can be changed at will. Fresh, boiled or pickled carrots are complemented with ham, mushrooms, eggs, herring. Especially impressive is the dish, decorated in the form of a fox with eyes and spout of olives.
