For 1 kilogram of cucumbers you will need:

  • 2 large lemons;
  • 500 grams of sugar (can be more if you want more);
  • a few sprigs of fresh mint;
  • cinnamon

Choose the youngest cucumbers (if possible), skin and hard seeds should be removed. Cut the cucumbers into cubes, and chop the lemon and mint into a blender. Remove the lemon bones so that they do not fall into the jam. Stir all the ingredients, add sugar and leave for 2-3 hours. After the mixture starts to juice, you can start cooking.

Sterilize jars of jam. For this it is convenient to use a double boiler.Boil the cucumber mixture in a thick-walled saucepan over low heat, stirring constantly. When the mass reaches the state of caramel, it can be laid out on cans.
