How to cook salad "Ten" with eggplant?

Seasoning can be added to make the preparation hot and spicy. Salad prepared according to this recipe, goes very well with meat dishes.


  • 10 pieces. eggplants;
  • 10 pieces. a tomato;
  • 10 pieces. pepper;
  • 10 pieces. onions;
  • 10 cloves of garlic;
  • 2 pcs. bitter pepper;
  • 0.5 liters of vegetable oil;
  • 3 tbsp. l Sahara;
  • 2 tbsp. l salts;
  • 1 tsp citric acid;
  • 2 tsp. seasoning with herbs;
  • 10 pieces. peppercorns;
  • Bay leaf.

Wash all the vegetables. Eggplant cut into large cubes and sprinkle with salt to leave bitterness. Let stand for 20 minutes. Pepper cut into cubes, tomatoes - slices, onions - rings, garlic - thin plates.

Since the output will be up to 5 liters of lettuce, it is better to take a pan with a capacity of 6 liters. In a bowl pour in vegetable oil and place onions. Turn on the heat and boil for 5 minutes. Put all other vegetables in layers in a saucepan on top of the onion: tomatoes, eggplants and paprika. Put the stew over low heat. It is advisable not to interfere, so that vegetables do not boil soft.

A salad pot must be chosen with thick walls so that the workpiece does not burn.

After 30 minutes add garlic, salt, sugar, citric acid and all other seasonings. Boil for 10 minutes. Spread out on the banks and wrap for 12 hours.

The classic recipe involves the use of vinegar for the preparation of the workpiece.


  • 10 pieces. eggplants;
  • 10 pieces.Bulgarian pepper;
  • 10 pieces. a tomato;
  • 10 bulbs;
  • 100 ml of vegetable oil;
  • 150 grams of sugar;
  • 1 tbsp. l salts;
  • 100 g of vinegar 9%.

From this amount of ingredients should be 4 cans of 0.5 liters.


  1. Vegetables cut into rings.
  2. Eggplants do not need to be peeled, sprinkled with salt and leave for 20 minutes. Rinse well.
  3. Put vegetables in a pan in this order: tomatoes, eggplants, onions and peppers.
  4. Sprinkle with sugar and salt on top, pour with vegetable oil and vinegar.
  5. Stew for 20 minutes. on low heat.

After being ready to lay out the workpiece on the banks and roll up.
