How to cook Chinese dumplings
Wonton with minced meat and shrimps
Gentle and juicy dumplings stuffed with complex stuffing with meat, shrimp, vegetables or mushrooms, always adding spices. Serve them hot, accompanied by soy sauce.
- 200 g low-fat minced pork;
- 400 g large peeled shrimp;
- 2 tbsp. l rice flour (can be replaced by starch);
- 1 egg white;
- 0.5 tbsp. l sesame oil;
- 0.5 tsp. ground black pepper;
- 130 g marinated champignons;
- 2 tbsp. l soy sauce;
- 2 tbsp. l semi-dry white wine;
- 0.5 tsp. Sahara;
- 200 ml of water;
- 1 tbsp. l refined vegetable oil;
- 600 grams of wheat flour;
Shrimp peel, chop, mix with minced meat. Add chopped mushrooms, salt, soy sauce, ground pepper, sugar, starch and egg white. Mix everything thoroughly.
Cook the dough. Sift flour in a heap, make a depression at the top. Boil 100 ml of water, pour into the well, mix. Add butter, salt and the remaining water, knead the dough.Leave it for 10 minutes, divided into 3 parts. Two wrap in a film and set aside, roll the remaining dough into a layer 2 mm thick.
Glass cut circles (diameter about 5 cm). In the center of each put a teaspoon of filling. Blind dumplings in the form of bags with an elongated neck. Arrange the product on a plate, put it in the fridge. Similarly, make dumplings from the remaining dough.
Preheat the steamer, put the wonton on the grill and cook for about 7 minutes. Serve dumplings hot, as an appetizer or main course.
Fried Gothi Dumplings
A dish that is traditionally prepared for the Chinese New Year. Homemade dumplings can be sculpted by the whole company, they can be prepared in advance and frozen, and then fried in portions. It is better to cook goti in sesame oil, but you can use any other odorless vegetable oil
- 300 grams of minced pork;
- 1 clove of garlic;
- 2 cm ginger root;
- 1 large celery stalk;
- 2 tbsp. l soy sauce;
- 200 grams of wheat flour;
- 100 ml of water;
- refined vegetable oil for frying.
Celery stalk clear of hard fibers, cut into large pieces and boil until soft. Finely chop the garlic and ginger. Put mince into a bowl, add chopped celery.Pour in ginger and garlic. Pour in soy sauce, mix.
Sift the wheat flour into a separate container, add salt and warm boiled water. Stir the ingredients thoroughly, knead the elastic soft dough. If it is too liquid, add more flour. Divide the dough into pieces, alternately roll them into thin layers. Cut circles, put a portion of filling on each. Pinch dumplings in the form of crescents, tightly join the edges so that they resemble the scallops.
Heat refined vegetable oil in a deep pan. Put dumplings in portions and fry them from all sides until golden brown. Turning goti need to be careful, thin dough is easily torn. Serve the dumplings hot.
