How to cook raw vegetable stew

You will need
  • - eggplants - 200 g;
  • - tomatoes - 200 g;
  • - Sweet pepper - 100 g;
  • - garlic - 1 - 2 slices;
  • - vegetable oil - 2 tbsp. l .;
  • - parsley - to taste;
  • - lemon juice - 2 tbsp. l .;
  • - sea salt - to taste;
  • - salt - 1 tbsp;
  • - water - 1 l;
  • - honey - 1 tsp.
Instruction
First you need to clean and chop the eggplant into small cubes. Then, in order to remove the bitterness of this vegetable, we place its pieces in a glass or enamelled container, pour a tablespoon of salt and pour water. Leave the eggplant on the table for about half an hour. Water should be drained, and in order to remove residues of salt and seeds, wash the vegetable with running water.
While soaked in salted water chopped eggplant, prepare the remaining vegetables. Peel off the thin skin and seeds of tomatoes and peppers. Then cut the peeled fruits into small cubes. Immediately add the chopped parsley and the garlic passed through a special press or chopped garlic into the vegetable mixture.
Prepared eggplants, put in a mixture of tomatoes and peppers, add salt to the vegetables and season with a mixture of vegetable oil with honey and lemon juice. Let the vegetables stand for 15 minutes and serve the dish on the table.
