How to cook tzatziki sauce

The most important components of the Greek sauce, in addition to yogurt, are the pulp of cucumber, olive oil, garlic and salt. It also adds black pepper, herbs and olives. The name of this sauce comes from the Turkish dish Dzhadzik, which consists of similar ingredients, but has a more liquid consistency.

How to cook tzatziki: a step by step recipe

To make tzatziki sauce, you will need:
- 150 g of thick unsweetened yogurt;
- 2 small fresh cucumbers;
- garlic clove;
- 2 branches of dill;
- 1 tsp. lemon juice;
- 1 tsp. olive oil;
- salt to taste.
This amount of ingredients is enough for cooking 2-3 servings of sauce.
Wash and peel the cucumbers. Cut them lengthwise into two halves, remove the seeds with a spoon. Cut the cucumber pulp into small pieces. Mix them with ½ tsp. salt and place in a colander. Leave on for 10-15 minutes - during this time they will drain excess liquid, which is absolutely useless to Tsatsiki.
Chop very finely dill.For piquancy, you can safely add mint leaves, which must also be finely chopped.
Rub the garlic on a fine grater or skip through a special press. Place it in a bowl, add chopped greens, yogurt, olive oil, lemon juice and cucumbers. Last pre-slightly wring hands. Add salt to taste and mix.
Place the sauce in the fridge for at least two hours. This time will be enough to mix the tastes of its ingredients, becoming a savory gastronomic cocktail.

Useful tips

Ideally, for cooking tzatziki you need to take Greek yogurt. However, it is not often seen on the shelves of Russian stores. If you could not find Greek yogurt, you can make it from the usual, only it should be natural, without any additives. Put ordinary yogurt in cheesecloth, then hang on any hook for 10-12 hours. During this time, all the excess liquid will be drained from the yoghurt, and it will become thick.
It should be borne in mind that yogurt with a similar procedure will lose about half of its weight - that is, to obtain 150 g of thick yogurt, you should take 300 g of normal.
Tzatziki sauce can be served not only to meat. He is good in duet with fried fish. In Greece, this sauce is part of the meze (special snacks for alcohol).
