The technology of cooking the souffle is based on stirring the fruit mass with sugar and gelatin, so without a mixer this recipe will not work. To make a souffle you need: - fresh strawberries 100 g; - icing sugar 75 g; - 8 g gelatin; - water for soaking gelatin; - lemon juice.
1. Rinse the strawberries and peel them. We shift it to the blender bowl and grind it into a smooth mash.2. Gelatin fill with water and let them swell.3.Combine the strawberry puree with powdered sugar and mix until smooth, add a little lemon juice to eliminate the sugary taste. Pouring strawberry mass into a metal container and put on a slow fire, heat everything up until the sugar particles completely dissolve.3. Gelatin warm up to a liquid consistency and mix with strawberry puree. Strawberry mass should be completely cooled before whipping.4. Now we will beat the mass with a mixer at high speed. A souvenir mass can be considered finished when it increases several times in volume and changes its color to lighter.5. For the formation of the souffle, I use the silicone form. Pour strawberry mixture into it,we will level with a spoon and put it in the fridge until it freezes.6. Cut the ready souffle using a knife into cubes and remove from the mold.
