If you like eggplant and are not afraid to experiment, then this recipe is just for you. Korean Eggplant is a spicy dish that is suitable for a festive or everyday table.
To prepare Korean-style eggplants, you will need very simple ingredients that are exactly in every fridge. Prepare your favorite vegetable in a new way, your guests will be delighted!
- Eggplant 3 pcs.
- Bulgarian pepper 3 pcs.
- Carrot 1 pc.
- Garlic 2 tooth.
- Vinegar 1 tbsp. l.
- Sunflower oil 1.5 tbsp. l.
- Parsley 1 bundle
- Salt 2.5 Art. l.
- Black pepper (ground) to taste
In the evening, wash the eggplants and, without peeling them, cut them into thin strips.
Sprinkle aubergine 1-2 tbsp. l. salt and leave for the night to insist to rid them of bitterness. Transfer the eggplants into a colander, rinse them thoroughly and squeeze to remove excess liquid.Put the pan with vegetable oil on high heat, lay out the eggplants and fry for 3-4 minutes. Remove the pan from the heat and place the eggplants in a deep dish.
Cut carrots and peppers into thin strips.
Cut into half rings onions.
Finely chop the parsley, skip the garlic through the press. Mix vegetables, herbs and garlic with eggplants, salt and pepper dish. Season with vinegar and mix well.
Put the dish in the fridge for at least 12 hours so that all ingredients are marinated.
